Susan Patton I interviewed Jim Robertson who is a manager/trainer for the Brass’s Dairy Store. He has earned a bachelor’s in business and a master’s in restaurant and food service. Jim has had 25 years experience in training and developing employees.

What do you teach and how old are your students? I teach employees how to properly make and serve customers using standards set by company and they are generally from the ages of 18-25 What kind of assessments are used? In this company we use booklets and test questions that are multiple choice and fill in the blank. When we hire managers they must go through an extensive training course that ensures they understand the proper methods of storing, handling, preparing, and serving safe foods. Managers must undergo a Serve Certification course followed by a state mandated quiz. What information do you want your earner to retain?

I am looking for the employees to know the menu and how to make the sundaes, sandwiches, and learning the computer so that they may effectively take orders and handle customer situations effectively. How are assessments changes implemented? Corporate generally decides when things need to be changed. Most of the time this occurs when there are new products added to the menu or when it seems that the trainees are unable to pass the test. Which assessment works better for your institution, authentic or traditional? Traditional setting would be most likely in this company. Since the tests we have include multiple choice and fill in the blank.

What are ways to ensure that the students are retaining the information taught? When new employees are entering the company we ensure that each one watches videos which tell them how the company works and the proper methods in making sundaes, sandwiches, fries, and how to operate the cash registers. Once they have watched them they then read the pamphlets and then followed by a test which is immediately graded to determine how much they have retained. If there are any questions that were answered incorrectly then I will cover these with them and then show them tit a demonstration followed by them doing the same thing afterwards.

I will have them retake the test in the case that they were unable to pass it the first time after a day of working and having hands on experience. How do you know that the students are learning the information needed to complete the course/training? Because they can pass the tests with at least 80%. I work to incorporate real life by showing them and explaining to them how it relates to the position held and the amount of interactions with the customers. Using this method, I have found that many employees are able to excel and become a star employee.
